Boursin and Tomato Pasta

OK, has anyone else downloaded TikTok during COVID and become obsessed??

Like everyone else (and all of Finland apparently) I had stumbled upon the Feta and Tomato TikTok pasta, and it looked great! However, I am not the biggest fan of feta and saw a version done with Garlic and Herbs Boursin and thought I would give it a try. This pasta was sooooooooooooooooooooooo good, and super easy to make! See my version below!

Ingredients (Serves 4-6)

2 packages of on the vine cherry tomatoes

2 shallots

2 packages of Garlic and Herb Boursin

1/4 cup of Olive Oil

Salt and Pepper

400g (approx.) of Penne

5 cloves of garlic

Chili Flakes

Fresh Basil

Instructions

  1. Pre-heat oven to 400C

  2. Pull tomatoes off the vine and rinse

  3. Add tomatoes, sliced shallots, olive oil, salt, pepper to baking dish and mix

  4. Add Boursin to middle of baking dish, roll in oil mixture

  5. Bake for 35 minutes

  6. Boil water, add salt (should taste like the ocean), then cook pasta to al dente.

  7. Reserve 1/2 C of pasta water once pasta is done cooking.

  8. Pull tomato and and boursin out of the oven, chop/microplane garlic, add to dish and mix well.

  9. Add pasta and chili flakes, mix again.

  10. Add pasta water, a little bit at a time if you think the mixture needs it.

  11. Add basil to top and serve.

Honestly, this was so good that my partner and I both had a second serving!
