Meatballs in Tomato Sauce
This recipe can be used as tapas, for a cocktail party or with pasta as a dinner. Makes 30
350 gm lean ground pork
350 gm lean ground lamb
1 Tbsp fresh chopped coriander
1 Tbsp fresh chopped oregano
1 Tbsp fresh chopped mint
1 Tbsp fresh chopped basil
1 Tbsp fresh chopped parsley
1 egg
1/2 medium red onion finely chopped
2 cloves garlic finely chopped
1/2 small red chilli finely chopped optional (can use Thai chilli paste 1/2 tsp)
2 slices bread finely chopped in the food processor
salt and pepper
Combine all the ingredients and fry a small amount to test seasoning. Adjust if necessary. Form into balls and you can either bake of fry for 20 minutes till done.
Sauce
1 red onion finely chopped
1 Tbsp oil
2 cloves garlic finely chopped
500gm crushed tomatoes
1 tsp Harissa paste or spices
2 Tbsp balsamic vinegar
salt and pepper
In a frying pan heat the oil then add the onion and garlic and cook till translucent. Add the tomato and Harissa paste and cook for 10 minutes. Add the balsamic and seasoning and cook a further 5 minutes. Add the cooked meatballs and saute for 10 minutes. Serve.
