Salsa
This is hands down one of my most favourite recipes my mom makes. Just like Grandma’s ginger molasses cookies, this is always a hit! Whenever I eat this it automatically transports me to my childhood, that’s how much and how long I have been making this recipe. This recipe is also very reminiscent of a Kenyan dish my partner makes called Kachumbari, maybe that’s why I love kachumbari so much!
Ingredients
4 Roma tomatoes chopped
1/2 Medium red onion finely diced
2 Garlic cloves finely chopped (or even better use a microplane!)
2 Limes squeezed
1 Jalapeño deseeded and finely chopped (or I used pickled jalapeños diced) - this is optional
1tsp Cumin
1tsp Salt
Pepper
Big handful of chopped Cilantro
1Tbsp Neutral oil
Mix everything together, taste and adjust as needed (I love cumin, lime and cilantro so sometimes I will add more), then serve. If you have some avocado’s laying around, I recommend adding a couple Tbs of the salsa to mashed avocado to make guac!
