Marinated Goat Cheese
Ok I know I said this for the last recipe I posted (salsa) but this is my favourite of all my mom’s recipes. I love this recipe so much, when I was in first year university my mom overnight shipped this to me because I missed her cooking (we lived 1300km apart). I should also say, I HATE olives but they’re great here!
Ingredients
1 log of goat cheese
25 Kalamata Olives (pitted)
Marinade
2 Cloves of crushed garlic
4 Tbsp Balsamic Vinigar
6 Tbsp Olive Oil
3 Springs Rosemary leaves pulled off the stem and finely chopped
1 tsp fresh cracked pepper
Mix marinade ingredients together, roughly chop the olives and add to the marinade. Place goat cheese and a container with lid and pour marinade wit olives on top. Let sit for a couple hours, flipping the container every couple of hours. Best if made 24h in advance. Serve with your favourite crackers.
