Cashews with Garlic and Curry Leaves
When traveling through Sri Lanka in 2016 our hotel had these as bar snacks and we fell in love! They are super easy to make, just be careful if using a mandolin to cut the garlic, as I sliced my finger! As a bonus, I put 1/3 of the cashews on a separate plate after frying and salted them with truffle salt instead of the regular salt, curry leaves and garlic.
Ingredients
3 cups raw cashews
6 garlic cloves thinly sliced
1 large branch of fresh curry leaves
Peanut Oil or non flavoured oil for frying
Sea Salt
Instructions
In a deep fry pan heat 1 inch of oil to 350-375 deg
Place Cashews in oil until golden brown, remove and let cool on paper towel. Make sure to lighly season right away
Place garlic slices in oil, strain, then season.
Place Curry leaves in oil (about 15 seconds), be careful as they will split. Season.
Once cooled a bit combine and serve.
