Lobster Bisque
This is a quick recipe for Lobster Bisque but tastes like you slaved for hours. Serves 6
3 lbs boiled lobster
1 carrot diced
1 onion diced
2 sticks celery diced
2 Tbsp oil
1 bay leaf
2 cups chicken broth
3 Tbsp butter
3 Tbsp flour
1 1/2 tsp salt
pinch cayenne pepper
2 cups milk
1 cup cream scalded
1/4 cup brandy optional
Remove the meat from the lobster shells, dice and reserve till ready to serve.
In a large pot heat the oil and add the vegetables sauteing till tender. Add the lobster shells and stir for 5 minutes. At this point you can add the brandy and set it on fire till the flame burns off. Add the broth and bay leafand cayenne pepper, boil for 20 minutes. Remove from heat and drain, reserving the liquid and discarding the rest.
In the pot, heat the butter and add the flour and salt. This is like making a white sauce. Allow the butter and flour to cook for 2-3 minutes then gradually add the reserved lobster liquid whisking to prevent lumps.
Scald the milk and cream and stir in gradually. Add the lobster meat and gently simmer for 5 minutes the serve in bowl or for a cocktail party in an espresso cup.
