Marshmallows
This is the recipe that my niece used to make Egg Nog Marshmallows at Christmas. It was adapted from one of Giada De Laurentiis’ recipes.
1/2 cup water, plus 1/4 cup
3 tablespoons (3 packets) unflavored gelatin
2 cups sugar
1/2 cup evaporated milk
1 teaspoon pure vanilla extract
1/2-3/4 tsp Egg nog flavouring
Prepare an 8x8 inch pan by buttering the bottom and all sides. Sprinkle generously with icing sugar to coat all sides preventing sticking.
In your stand mixer, pour 1/2 cup water and sprinkle the gelatine overtop letting it bloom for 10 minutes. Meanwhile, combine the sugar, evaporated milk and 1/4 cup water in a heavy bottomed sauce pan. heat over medium heat stirring till the sugar melts then allow the mixture to simmer without stirring. Continue to simmer till mixture reaches 240 F. At that time turn your mixer on the lowest speed and gradually add in the sugar mixture. Gradually turn the speed up to the highest speed and beat for approx. 10-12 minutes till thick, fluffy and tripled in volume. Turn the speed down and add in the flavouring till combined then turn off the machine. Scrape down the sides and pour into the prepared pan. You can wet your hands to help flatten the marshmallow. Sprinkle the top with icing surag. Allow to set for 12 hours then cut into desired shapes.
You can add food colouring or other flavourings.
