Wonton or Potsticker Soup
Our daughter Tash is currently completing her Masters in Physiotherapy in the UK. We Skype everyday and almost always discuss what she is making for her dinner. She has always taken a big interest in experimentingwith recipes that turn out to be pretty amazing. She loves Asian food and this is her recipe for Wonton soup.
Makes 12 wontons
Wontons
200gshelled, deveined and chopped shrimp
3 green onions finely chopped
2 cloves garlic crushed
1 tsp sesame oil
1 tsp soy sauce
1 Tsp finely chopped cilantro
round wonton wrappers
Broth
1 litre chicken stock
1 tsp sesame oil
1 tsp soy sauce
1 green onion chopped
1 Tbsp chopped cilantro
To make the wontons, mix the first 5 ingredients together in a bowl. Place a tsp of the filling in the centre of the wonton and lightly wet the edges. Pull the edges together to make a small purse. Set aside.
Heat the broth with the sesame oil and the soy sauce to a simmer. Add in the wontons and cook for 3-4 minutes till the wontons rise to the top of the broth. Divide into 2 bowls and garnish with the green onion and cilantro.
